Authenticity, Fruit and Island Soul
-
Marès Tinto Jovenis a wine that celebrates the purest, most direct expression of the Mallorcan vineyard. Made from a blend of native varieties such as Mantonegro, Callet and Gargollassa, together with the classic Merlot and Syrah, this young red reflects freshness, fruit and Mediterranean character without artifice.
-
Harvesting is done manually and selectively, choosing only the bunches at their optimum ripeness. Once at the winery, the grapes spend the night in a cold chamber to reduce their temperature, preserving the most delicate aromas and preventing premature oxidation.
-
Before fermentation, the bunches go through a sorting table, where any that do not meet the quality standards are removed. The grapes are not crushed, allowing the skins to remain intact during fermentation. This results in a gentler extraction that enhances varietal aromas and fruit expression.
-
Each variety contributes its own essence to the final wine:
-
Mantonegroprovides fresh red fruit and a typically Mallorcan character.
-
Calletadds lightness, balanced acidity and a distinctly Mediterranean herbal profile.
-
Gargollassabrings elegance, minerality and a floral touch.
-
Merlotrounds out the blend with softness and ripe black fruit.
-
Syrahcontributes intensity, colour and a subtle spiciness that adds depth.
-
The result is a young, fruity, fresh and easy-drinking red, perfect to enjoy on any occasion. Like all Bodegas Bordoy wines, Marès Tinto Joven is clarified with yeast protein, making it suitable for vegans while maintaining the highest quality and respect for the environment.
Tasting Notes
-
Marès Tinto Joven is a vibrant expression of the Mallorcan landscape. At first glance, its bright cherry-red colour with violet highlights already conveys freshness and vitality — like a summer afternoon on the island.
-
On the nose, the wine opens with an explosion of fresh red fruits: strawberry, cherry, raspberry… all wrapped in a delicate floral perfume and a subtle backdrop of Mediterranean herbs. This is a wine that hides nothing — direct, cheerful and authentic.
-
Each grape in the blend paints a unique brushstroke on this distinctly Mallorcan canvas. Mantonegro, with its gentle, lightly spiced character, provides structure without losing lightness. Callet, always fresh and with lively acidity, gives the wine that vibrant edge that makes it so easy to drink.
-
Gargollassa, a nearly forgotten variety now being revived, adds elegance and a floral touch that elevates the whole. To this are added Merlot, which rounds out the wine with ripe fruit and soft tannins, and Syrah, which contributes spice and depth without overshadowing the local grapes.
-
On the palate, Marès Tinto Joven is agile, juicy and well balanced. Its passage is light yet full of character, with soft tannins and a refreshing acidity that extends the finish. It is a wine that invites conversation, shared meals and unhurried moments.
Food Pairing
-
Marès Tinto Joven shows its best when shared with traditional Mallorcan cuisine. Its fresh, fruity and relaxed character makes it the ideal companion for dishes that, like the wine itself, are born of respect for the land and the beauty of simplicity.
-
Imagine a mild evening on the island, a glass of Marès in hand and a steaming bowl of Mallorcan soups on the table. With its lively acidity and light profile, the wine refreshes the palate between spoonfuls of dark bread, cabbage, tomato and peppers, enhancing the humble yet profound flavours of this ancestral dish. The wine’s red fruit intertwines with the vegetables’ earthy notes, creating a natural and comforting harmony.
-
Later, a freshly baked coca de pimientos appears, with its crispy base and a layer of sweet, roasted peppers. Here, Marès displays all its youthful charm: its freshness cuts through the olive oil, while its fruity and floral notes merge with the peppers’ caramelised sweetness — a bite that tastes like a Mediterranean summer.
-
To finish, a classic Mallorcan sobremesa: aged cheese with quince paste. The contrast between the salty cheese and the sweet quince finds the perfect bridge in Marès Tinto Joven. Its lightness and fresh fruit balance the cheese’s intensity and soften the quince’s sweetness, leaving a clean, elegant and flavourful finish.
