Freshness, Precision & Mediterranean Soul

  • Marès Blanco
    is born from meticulous vineyard care and a profound respect for the purest expression of the grape. Each variety in the blend — Prensal, Viognier, and Giró Ros — is vinified separately to preserve its unique character, resulting in a wine that is fresh, balanced, and full of personality.
  • Harvest is done manually, and upon arrival at the winery, the grapes spend the night in cold storage at 1–2 °C. This cryomaceration process preserves delicate aromatic compounds and slows oxidation, ensuring a vibrant, varietally pure expression.
  • Before pressing, the grapes undergo vibrating-table sorting to remove any that do not meet strict quality standards. They are then gently pressed using a state-of-the-art pneumatic press that extracts only the finest, most aromatic free-run juice.
  • Fermentation takes place at low temperatures (15 °C) for a slow, controlled process that enhances primary aromas and preserves the wine’s natural freshness.
  • Once fermentation is complete, the wine remains on its fine lees, with regular bâtonnage. This lees aging brings volume, silkiness, and complexity, while maintaining the lively freshness that defines Marès Blanco.
  • For clarification prior to bottling, a yeast-derived, non-animal fining agent is used, making Marès Blanco a fully vegan wine.
  • The result is an expressive, well-balanced white wine with a true island soul, reflecting Bodegas Bordoy’s commitment to quality, sustainability, and the identity of Mallorca.
