    was born from the desire to capture the most refined and expressive side of Ull de Llebre (Tempranillo), grown in the unique surroundings of southern Mallorca. This rare variety on the island takes centre stage in this wine, offering a platform to showcase its Mediterranean character, elegance, and surprising finesse.
  • A small proportion of Merlot is added, providing structure and roundness, resulting in an exclusive collector’s red wine, of which only 900 bottles have been produced.
  • Harvest is carried out manually, with a double selection:
    first in the vineyard, then in the winery, where each grape is carefully hand-checked to ensure flawless quality. The grapes are not crushed, allowing the skins to remain intact during fermentation and favouring a gentle, respectful extraction.
  • Fermentation takes place in stainless steel tanks at controlled temperatures (25–28 °C) with long macerations of up to five weeks, extracting the full aromatic and structural potential of Ull de Llebre while preserving its natural elegance.
  • After fermentation, the wine is aged for 15 months in premium French oak barrels, selected for their fine grain and ability to add complexity without masking the fruit.
