  • Terra de Marès
    is the purest expression of the Mediterranean spirit of Bodegas Bordoy. Crafted only in exceptional vintages that allow for slow, balanced ripening, this wine embodies the richness of our Syrah, Merlot, Callet and Gargollassa grapes.
  • The carefully selected vineyards grow on the island’s characteristic marès limestone soils, yielding a very limited production of outstanding quality. Thanks to their privileged location and meticulous vineyard work — including green harvesting to limit yields to less than 1.5 kg per vine — the grapes achieve exceptional concentration.
  • Each variety contributes its unique character: Syrah, in small proportion, gives structure and aging potential; Merlot adds velvety texture and ripe fruit; while the native Callet and Gargollassa bring freshness, authenticity, and the true soul of Mallorca.
  • Harvesting is done by hand, with strict selection both in the vineyard and at the winery — first by bunch, then grape by grape. Fermentation takes place in stainless steel tanks at controlled temperatures of 25–28 °C, with long macerations of 5–6 weeks to extract maximum complexity.
  • Aging takes place in French oak barrels — 500L for Callet and Gargollassa, 225L for Syrah and Merlot — always seeking the perfect balance between fruit, oak, and elegance.

Tasting Notes

  • Appearance: Deep ruby red with youthful violet highlights.
  • Aroma: An expressive, layered bouquet unfolds in the glass. The primary fruit aromas are intense: Syrah brings blackberry, blueberry, and violet; Merlot adds ripe plum, black cherry, and a delicate hint of liquorice; Callet enhances freshness with raspberry and redcurrant; while Gargollassa contributes floral elegance and a subtle mineral touch.
  • Secondary aromas, the result of native yeast fermentation and extended maceration, suggest toasted bread, red fruit yogurt, and a creamy lactic nuance. Barrel aging in French oak brings refined tertiary notes of vanilla, cocoa, clove, blond tobacco, and a balsamic background with hints of leather and sweet spices.
  • Palate: Terra de Marès is generous, structured, and enveloping. Silky, mature tannins and perfectly balanced acidity lead to a long, persistent finish with lingering black fruit, spices, and a mineral note that reflects the character of our terroir. Each grape variety plays its part — Syrah for structure and longevity, Merlot for roundness, Callet for freshness and Mallorcan typicity, and Gargollassa for complexity and authenticity.

  • Terra de Marès is a wine to savour slowly, in good company — the way life is enjoyed in Mallorca. Its depth and elegance make it a perfect match for flavourful, soulful dishes.
  • Picture a rustic table with oven-roasted lamb infused with rosemary and thyme: the juicy meat and Mediterranean herbs harmonise beautifully with the wine’s structure. It also pairs exquisitely with beef tenderloin or duck breast with a red berry sauce, where the wine’s dark fruit notes shine and linger on the palate.
  • Terra de Marès is particularly at home with Mallorcan cuisine. A traditional porcella rostida (roast suckling pig) with crispy skin and tender meat finds its ideal partner in this wine, which balances the dish’s richness. Tumbet — Mallorca’s iconic layered roasted vegetables — highlights the freshness of Callet and Gargollassa, while frito mallorquín with its bold, spiced flavours melds seamlessly with the wine’s balsamic and spicy notes.
