    is a limited-edition wine created to capture the purest essence of Merlot grown in the heart of the Mediterranean. Produced exclusively from grapes of a single, carefully selected parcel, this wine is an intimate and profound interpretation of the variety — designed for those who appreciate Merlot in all its dimensions: its fruit, texture, elegance, and ability to stir emotion.
  • It is made only in exceptional vintages, when the climate allows for slow, balanced ripening and the grapes reach their maximum expression. The parcel, planted on limestone marès rock soils, yields a very limited but exceptionally high-quality harvest. A rigorous green harvest is carried out, leaving less than 1.5 kg of grapes per vine, ensuring a natural concentration of aromas, colour, and structure.
  • Harvest is carried out manually, with a double selection process: first in the vineyard and then in the winery, where each grape is individually checked by hand. The grapes are not crushed, allowing the skins to remain intact during fermentation and ensuring a gentle, respectful extraction.
  • Fermentation takes place in stainless steel tanks at controlled temperatures of 25–28 °C, with extended maceration of up to 5–6 weeks to extract the full aromatic and structural potential of Merlot while preserving its natural elegance.
  • Aging takes place in 225L French oak barrels for 12–18 months (depending on the vintage). This format allows for slow, balanced development, respecting the fruit and adding complexity without overwhelming the wine.
