is crafted with utmost care, embodying Bodegas Bordoy’s dedication to quality and to expressing the unique terroir of Mallorca. Fermentation takes place in stainless steel tanks with controlled temperatures, using native yeasts and extended macerations of up to 5–6 weeks to achieve maximum aroma, colour, and structure.
  • La diferencia clave está en su crianza excepcional:
The defining element of this wine is its exceptional aging: a minimum of 24 months in premium French oak barrels, carefully selected for their fine grain and medium toast. This maturation gives the wine remarkable elegance, silky tannins, and a complex bouquet with layers of sweet spices, cocoa, tobacco, and a refined balsamic background.
  • Each grape variety in the blend has been chosen not only for its quality but also for the harmony it brings to the whole:
  • Merlot
provides a smooth, round foundation with generous body and ripe black fruit notes that wrap the palate in warmth.
  • Syrah
adds depth, colour intensity, and a hint of pepper and violet that enrich the wine’s aromatic profile.
  • Cabernet Sauvignon
contributes structure and longevity, with firm tannins and balanced acidity that ensure excellent bottle aging.
  • Callet,
a native Mallorcan variety, brings freshness, lightness, and delicate red fruit and Mediterranean herbal nuances that root the wine in its island origin.
  • Gargollassa,
another rare local grape, enhances elegance, minerality, and a distinctive aromatic dimension that reinforces the wine’s authentic Mallorcan identity.
  • The result is a complex, beautifully balanced wine, where each variety plays its part to create a refined, deeply Mediterranean expression.

Food Pairing

  • Marès Reserva is a wine that invites time, conversation, and shared moments. Its elegance and depth make it the perfect companion for dishes with rich, layered flavours that reveal themselves slowly.
  • One of the most enticing pairings is free-range rooster braised with mushrooms and red wine, a slow-cooked dish that harmonises perfectly with the wine’s spicy, balsamic, and ripe fruit notes.
  • It is also an exceptional match for arroz brut, Mallorca’s iconic brothy and aromatic rice dish combining meats, local sausages, and seasonal vegetables. The wine’s structure complements the richness of the dish, while its freshness cleanses the palate between bites.
  • For something truly distinctive, try it with a warm Mallorcan almond milk appetiser with sobrassada and honey. The sweet-savoury-spicy combination enhances the wine’s most delicate nuances, especially those imparted by its long French oak aging.
  • Game dishes are another excellent choice – think hare in civet or partridge in escabeche. The wine’s firm structure and subtle mineral backbone pair gracefully with the depth and intensity of these traditional recipes.
  • Marès Reserva is a wine that graces the table with nobility – adding depth without dominating, always leaving a long, serene, and profoundly Mallorcan impression.
