Precision, Freshness & Mediterranean Character

  • From vineyard to glass, Marès Crianza is crafted with care and precision, striking the perfect balance between tradition and modern winemaking.
  • The process begins with a double manual selection:
first in the vineyard, where only the healthiest, most balanced bunches are harvested by hand, and later in the winery, where every grape is sorted individually to ensure flawless quality.
  • Once selected, the grapes are gently chilled in cold storage, allowing fermentation to start at a controlled temperature of 5 °C. This key step preserves the fruit’s most delicate and expressive aromas. The grapes are left uncrushed, so that whole berries enter fermentation, favouring a softer extraction and maintaining vibrant, varietal aromas.
  • Aging takes place for a minimum of 12 months in fine-grained French oak barrels, chosen for their ability to impart elegance while letting the fruit shine.
  • The result is a balanced wine with ripe fruit, gentle spice, and subtle toasted notes, while preserving the freshness and varietal character that define the Marès style.
  • Marès Crianza speaks clearly of its land, climate, and Mallorcan roots, offering an honest expression of our vineyards and a contemporary approach to Mediterranean winemaking.

Tasting Notes

  • This blend of international and native varieties results in a red wine with a distinct identity — fresh, elegant, and full of Mediterranean character.
  • Appearance:
Bright cherry-red colour with medium-high depth and garnet hues, a sign of its barrel aging.
  • Aroma:
Expressive and inviting. Ripe black fruit, cherry, and raspberry mingle with black pepper, clove, and wild herbs — all enhanced by at least 12 months in fine-grained French oak. The oak brings complexity without overpowering the fruit, keeping the freshness that defines the Marès collection.
  • Palate:
Round, balanced, and fluid, with soft, well-integrated tannins. The entry is smooth, the mid-palate elegant, and the finish long and persistent, with lingering notes of ripe fruit, sweet spices, and a subtle balsamic touch that evokes the Mallorcan landscape.
  • Each variety plays a role:
Cabernet Sauvignon gives structure and firmness, Merlot adds smoothness and volume, Syrah contributes intensity and a spicy edge, Callet brings freshness and a true Mallorcan soul, while Gargollassa enhances elegance and authenticity.
  • Marès Crianza is for those seeking authenticity, balance, and a sensory experience that proudly speaks of Mallorca.

Food Pairing

  • Marès Crianza shines alongside dishes that share its roots — honest, flavourful, and deeply connected to the island’s culinary traditions. Its balance of fruit, freshness, and gentle oak makes it a versatile partner that enhances flavours without overpowering them.
  • One of its most natural pairings is llom amb col, a classic Mallorcan dish where pork loin is wrapped in cabbage leaves and slow-cooked with sobrassada, pine nuts, and raisins. The wine’s ripe fruit echoes the sweetness of the raisins, while its spicy and balsamic notes meld beautifully with the sobrassada and rich aromas of the stew.
  • Another perfect match is burballes amb carn, a rustic pasta dish with meat, vegetables, and often mushrooms or local cured meats. Its hearty flavours and textures pair seamlessly with the structure of Marès Crianza, while the wine’s freshness and roundness balance the dish’s richness.
  • It also pairs wonderfully with grilled meats, gentle stews, or a platter of Mallorcan charcuterie — sobrassada, camaiot, and botifarró all find an elegant and refreshing counterpart in the wine.
  • Marès Crianza doesn’t just accompany Mallorcan cuisine — it elevates it. This is a wine that understands the rhythm of the island, respects its flavours, and adds another layer of pleasure to every bite.
