“Els Camps de Sa Vinya”

and “S’Aujub Vermell”

In 1993, Miguel Sastre Bordoy fulfilled his lifelong dream by acquiring the historic plots Els Camps de Sa Vinya and S’Aujub Vermell on the Sa Torre estate, in the heart of the Marina de Llucmajor. His vision was clear: to revive Mallorca’s winemaking tradition and restore it to its former glory.

A Glimpse into History

The Finca Sa Torre

Sa Torre dates back to 1369 and is home to a striking neo-Gothic chapel with an octagonal floor plan and hexagonal apse. Legend has it that the chapel was built after the estate’s owner saw her wish for a son fulfilled.

In the heart of Llucmajor, our 23 hectares of vineyards stretch like a green mantle between wild scrubland and Mediterranean pine forests. This mosaic of nature fosters rich biodiversity, creating an authentic and living landscape that shapes the soul of our wines.

Native and International

  • Indigenous Mallorcan grapes: Premsal Blanc, Giró Ros, Gargollassa, Callet, Mantonegro
  • Classic varieties: Chardonnay, Viognier, Cabernet Sauvignon, Merlot, Syrah, Tempranillo (Ull de Llebre)

We practice conscious viticulture and minimal-intervention winemaking—avoiding unnecessary actions in both vineyard and cellar. This approach allows the grapes to express the essence of their origin, reflecting the unique soil, climate, and landscape of Mallorca with honesty and purity.

Winemaking

Tradition Meets Precision

  • Hand Harvesting – careful selection of the best grapes in 15 kg boxes
  • Cooling & Cold Maceration – overnight resting at 2 °C
  • Gentle Pressing – delicate extraction of must for whites and rosés
  • Fermentation – in stainless-steel tanks with temperature control to preserve freshness
  • Vegan Clarification & Filtration – achieving clarity with minimal intervention

Aging in

French Oak Barrels

our aged wines rest in 100% French oak barrels inside a former marès stone quarry converted into an underground cellar, where constant temperature (15–17 °C) and controlled humidity allow them to gain structure, depth, and character.
