is the purest expression of the native Giró Ros, an ancestral grape variety carefully cultivated by Bodegas Bordoy in its vineyards in southern Mallorca. This single-varietal wine was created to honour the island’s winemaking identity, offering an elegant, fresh white wine with a true Mediterranean soul.
The harvest is carried out manually, selecting only the bunches at their optimum health and ripeness. Once at the winery, the grapes are cooled overnight in a cold chamber at 1–2 °C, beginning a process of aromatic cryopreservation that protects the most delicate compounds and prevents premature oxidation.
Before pressing, the bunches go through a vibrating sorting table where any grapes that do not meet quality standards are removed. A state-of-the-art pneumatic press is then used to extract only the mosto flor — the finest, most aromatic free-run juice.
Fermentation takes place at a low temperature (15 °C) in stainless steel tanks, allowing for a slow, controlled process that enhances the primary aromas typical of Giró Ros: white fruit, wildflowers and a delicate mineral background.
After fermentation, the wine remains on its fine lees for a period of time, with regular bâtonnage. This lees ageing adds volume, silkiness and complexity, while preserving the freshness and vibrancy that define this variety.
For clarification, yeast protein, a non-animal fining agent, is used, making Fermança Blanco fully vegan.
The result is an elegant, expressive white wine that is profoundly Mallorcan, paying tribute to the island’s viticultural heritage through a recovered and celebrated ancestral variety.
